In some factories there is a poor filter-press arrange ment, and the loss of sucrose by running the skim mings into the ditch is immense. A careful check ing of the sucrose account shows by the difference between the sucrose in the juice and sucrose in the total product the amount of sucrose lost, and the importance of watching this part of the factory is clearly shown. In other factories there is a large loss of sugar in the final molasses and the pan work requires especial attention.
