Given a proper supply of home-grown beets, there is no reason why the industry should not, in time, become a very large one. The chem istry of the sugars has now reached a high state of perfection, and much is known regarding the different kinds of sugars. Nevertheless, it is open to question whether cane and beet sugar are absolutely iden tical. One drawback to the latter kind is met with in the mother liquor or molasses it cannot be used for human consumption, owing to the small quantity of some poisonous substance or substances that it contains. The molasses from cane sugar, on the other hand, is familiar to all. Prob ably chemistry will find means to utilize the former variety for other purposes than at present.
