Present work is about the determination of fatty acid composition of balochi fat tailed sheep, The fat is taken from the different body parts of the sheep and subjected to physio-chemical analysis. Different para meters were determined some of which are Iodine value, Saponification value, Unsaponifiable matter, Saponifiable Matter, Free fatty acid (FFA), Peroxide value (PV), Density, Refractive index, Fatty acid thyl ester, Ester Value, I.N.S Value, Moisture Content, Slip Point, Acid Value. Then the extracted fat is reacted to form fatty acid methyl esters and the composition of fatty acids is then determined by using GLC (Gas Liquid Chromatography)
