Excerpt from The Up-to-Date Cook Book of Tested RecipesTwelve potatoes pared and grated, one onion sliced, one table spoonful of parsley, one cup un'skimmed milk or cream, two table spoonfuls of butter, one tablespoonful of corn starch wet with cold milk, one teaspoonful of sugar, two quarts boiling water, pinch of soda in milk. Parboil the potatoes ten minutes, throw off the water, and put them into two quarts of boiling water, cook in this one hour, with the onions, replenish from the kettle as it boils away, then set through a fine colander.
